Zucchini Flower Fritti
Crispy, salty and fried. An awesome appetiser to have alongside a Birra Moretti!
Ingredients
Packet of fresh zucchini flowers (8 - 10)
1/2 cup of plain flour
2 free range eggs
salt and pepper to season
grapeseed oil (or another light frying oil of your choice) for frying
Method
Beat the eggs
Place the flour on a flat plate
Heat the oil in a frying pan
Dip the zucchini flowers, one at a time, into the egg mixture and then roll in flour mixture.
Put the flowers into the oil when the oil is heated up at the perfect level. I find if you pop in a bread crumb that is the best way to determine whether it’s ready to fry. Once they are golden brown on one side, turn over and fry the other side until golden brown.
Remove and put onto paper towel to get rid of excess oil. Season with sea salt and pepper.
Serve with an ice cold beer.
